Simple Southern Cornbread
Ingredients: Two cups self-rising cornmeal. One half cup self-rising flour. Dash salt.
In a
small mixing bowl, add all ingredients and stir in water until you have a
mixture about the consistency of cake mix.
Grease a 7 inch cast iron skillet and heat in oven to 400 degrees F. I use gobs of I Can't Believe It Is Not Butter. Then pour in cornmeal mixture and bake at 400 degrees F. for about twenty minutes, or until done. If you like it extra crispy, cook about 30 to 33 minutes.
Skillet Care
After dumping the cornbread from the skillet, immediately wipe out with a clean cloth. Next pour a tablespoon of cooking oil, I use olive oil, into the skillet and use a paper towel to coat the skillet evenly. This will prevent the skillet from sticking the next time you use it.
